Chocolate Fudge Slice
Recently we had some lovely guests who had dinner with us each night.  One of the desserts was my Chocolate Fudge Slice and I have to admit the one I made on that occasion was a bit of an accident as I had been busy and just threw a load of stuff together in the hope it would work.  Well it did, and as far as I can remember this was the recipe.  The guest asked me for this recipe when she left, so I thought I would add it to the web for all to see.

Method:

4oz butter 
½ cup caster sugar
1 egg, lightly beaten
1 tsp vanilla essence
2 tbsp cocoa powder, sifted 
1 tsp Malibu Rum 
8 - 9 oz wine biscuits, very finely crushed in a food processor 
½ cup coconut or ground almonds

chocolate icing 
¼ cup chocolate sprinkles


1. Line a  slice tin with nonstick baking paper. Place butter in a saucepan to melt, then stir in sugar and stir until dissolved.

2. Add beaten egg off the heat and stir for 1 minute to cook egg. Stir in vanilla, cocoa, malibu, crushed biscuits and coconut and then press into the prepared tin and refrigerate to set.

3. Spread slice with simple chocolate icing (see below) and scatter with chocolate sprinkles. Cut in bars or squares to serve. 

Simple chocolate icing - sift 1½ cups icing sugar and 2 tbsp cocoa into a bowl. Add 20g melted butter and 3 tbsp boiling water and stir until smooth.
